2-Ingredient Vegan & Gluten-Free Hamantaschen for Purim

Purim is around the corner, and if you’re looking for an easy, delicious, and allergy-friendly hamantaschen recipe, you’re in the right place! These hamantaschen are vegan, gluten-free, refined sugar-free, and made with just TWO simple ingredients—yes, really!

Using Rorie’s Low Carb Gluten-Free Dough Mix and coconut cream, you can whip up these hamantaschen in no time. They’re crisp on the outside, tender inside, and perfect for filling with your favorite jam.

Ingredients

  • 2 cups of Rorie’s Low Carb Gluten-Free Dough Mix (linked below)
  • Coconut cream (just the thick cream part, not the milk)
  • Filling of your choice (I used chia seed jam—healthy and delicious! Linked below)

Instructions

Make the dough:

  • In a mixing bowl, create a well in the center of the flour.
  • Scoop out just the thick coconut cream (not the liquid) and add it to the well.
  • Mix everything together until a dough forms.

Roll & cut the dough:

  • Place a sheet of parchment paper on your work surface and roll out the dough directly on top.
  • Use a cup or any circular object to cut out circles.

Shape the hamantaschen:

  • Place your chosen filling in the center of each circle.
  • Pinch the edges to form a triangle shape.

Bake:

  • Preheat your oven to 400°F (200°C).
  • Bake for 20 minutes, then check on them. If needed, bake for an additional 10 minutes until golden brown.
