Here’s a very easy pancake recipe and the best part it’s completely healthy.
What you need:
1/2 teaspoon vanilla extract. ( I just use the vanilla sugar for both the sugar and the vanilla taste. )
1/2 cup of almond milk
1 and 1/3 cups of almond flour
1/4 cup of all purpose flour
1/4 teaspoon of baking soda. ( you can put baking powder instead as well. )
Olive oil for frying.
What you do:
Beat the egg until smooth.
Beat in vanilla and milk.
Add almond flour and stir until a smooth pancake batter forms.
Heat a little olive oil in a frying pan/skillet. I usually like taking a piece of bounty and wipe the oil through the entire skillet.
Make little small pancakes on the frying pan and watch until the bubbles on the pancakes are matte and not shiny or when you see golden brown on the edges form and then flip.
wait till the other side is cooked through and golden.
Once the first batch is ready, transfer to a plate, put a little butter over each small pancake and repeat the whole process again until the batter is done.
Add more water to make the batter liquid if you want to make larger pancakes.
